APT11: Peanut Butter — Banana — Oatmeal Pancakes

Here’s my version of healthy-ish pancakes.

Ingredients:
1 rounded cup of Trader Joe’s Buttermilk Pancake Mix
1 cup of dry oatmeal, I used Trader Joe’s Steel Cut Oats
1 cup water
1 egg
1 fresh banana, mashed
1–2 tablespoons of peanut butter, I used all-natural freshly ground peanuts
(Optional) 1 teaspoon of pure vanilla extract

Directions:
1. Blend dry ingredients together. Feel free to add spices. I threw in some cinnamon.
2. Work in the wet ingredients, stirring thoroughly. Make sure peanut butter is fully working into the mixture.
3. Add more water, slowly, if the mixture feels too thick. If your mixture is too thin, add more pancake mix.
4. Let sit in the refrigerator for 15–30 minutes.

Cooking:
1. Have a heated pan ready to go with cooking spray or butter. If you have extra banana slices, feel free to put them in the pan first then pour batter over them so that they cook into the top.
2. Make sure the pancakes bubble before flipping. Not sure what this means? Watch this video.
3. I like to keep my pancakes warm in the toaster oven while I’m cooking the rest of them. This will also help cook the pancakes through, if you pulled them out of the pan before they were fully done. But, cook them well on the stove first. The toaster oven isn’t able to fix everything.

Eating:
1. Feel free to use maple syrup or just eat them straight up plain. These should be hearty, stick-to-your-ribs pancakes that are healthy-ish and higher protein than normal pancakes. Enjoy!

Part of my banana burned, but it was still delicious.
