APT22: Egg Nog Pancakes

A festive, non-alcoholic breakfast treat.

Ingredients:

  • 1 cup of Krusteaz Buttermilk Pancake Mix
  • 2/3 cup of non-alcholic Egg Nog, I used Turkey Hill
  • 1 egg, any size
  • Dash of ground nutmeg, dash of ground cloves (or, more to taste)

Instructions:

  • Beat the Egg Nog and the egg together until combined.
  • Stir in the pancake mix until blended.
  • Let the bowl sit for at least 15 minutes. On the counter is fine, or in the fridge if you have raw egg concerns. (This helps to get them fluffy.)
  • Pan fry as you normally would for pancakes.

Miscellaneous Notes:

  • I often make pancakes and waffles from scratch using this very simple “Everyday Pancakes” recipe from Mark Bittman. I just happened to have Krusteaz on hand and used that. This recipe would also work with the popular Kodiak Cakes mix.
  • Traditional Egg Nog has Bourbon in it. While I did not add that to these pancakes, you can experiment with it yourself. It’s likely to retain more alcohol if you pour it over the pancakes after they are cooked. This maple syrup is aged in whiskey barrels and would likely be amazing on these pancakes: Dad’s Hat Small Batch Pennsylvania Maple Syrup.
  • Due to the high sugar content in the Egg Nog, your pancakes may brown quicker than you are used to. I recommend the “low and slow” method. Cook the pancakes on low heat over a slower period of time. Putting a lid on the pan will help cook it quicker.
  • The viscosity of the Egg Nog and letting the batter sit will make this a thicker batter than you may be used to. It’s all fine. Just spoon in out into the pan, if it won’t pour out easily.
  • The Egg Nog is already spiced, so it may not need the extra nutmeg and cloves listed in the ingredients may not be necessary. I wanted to make sure that they had the proper essence of Egg Nog. Add to your own taste.
The batter will be very thick, which is fine. Make sure pancake is cooked through.
Hearty, flavorful pancakes.
These browned quicker than normal pancakes, likely due to the sugar in the Egg Nog. Use lower heat.
