APT23: Avocado Frittata

I saw this video on Instagram by user whitegrapesandinshape, and I wanted to try it out for myself. I believe she called it an “Avocado Crisp,” but mine turned out more like a Frittata and that’s the name I will use.

Avocado Frittata
A high-protein savory nom.

Ingredients:

  • 3 eggs, any size
  • 3 avocados, at the consistency where they are easily mashable
  • 3 cups of shredded cheese, any kind
  • Spices are optional, but I mean, why would you not? I used 1 teaspoon of sea salt and 1 teaspoon of black pepper. I wanted to start simple, but going forward, this could definitely have red pepper flakes, paprika, etc.

Directions:

  • Pre-heat oven to 350F (176C or whatever)
  • Mash the avocados well in a bowl.
  • Mix eggs in well.
  • Mix in shredded cheese.
  • Add spices to your choosing.
  • Drop large dollops of this mix onto a baking sheet lined with parchment paper, or whatever non-stick surface or your choosing.
  • Flatten dollops down with the back of a spoon, or create a divot, whatever your aesthetic.
  • Bake at 350F for 30 minutes.
  • The thinner you make your dollop, the crispier this will be. So, figure out which texture you want, soft chewy or hard crispy.

Notes:

  • Full Disclosure: In the original video, whitegrapesandinshape used 1 avocado, 1 egg, 1 cup of shredded mozzarella, and Everything Bagel seasoning. I used 3 avocados, 3 large eggs, 3 cups (ish) of Kerrygold Dubliner cheese, with 1 tsp of salt and 1 tsp of black pepper.
  • Get creative and use a variety of spices in this. For next time, I think jalapeños and lime would taste really good in this.
  • You could try pan frying these, but I found the oven to be easier since I didn’t have to watch it. I baked and reheated these in a Ninja Foodi oven.
  • Is this Keto? Who the hell knows. Look it up, I guess.
Avocado Frittata: Not the most beautiful thing in the world, but it tastes good.
