APT24: Baked Feta Pasta

I kept seeing this viral video about baking feta with tomatoes and mixing in with pasta. So, I finally tried it. Here’s how mine went.

  1. I preheated my oven to 400F. I then prepared a baking dish by putting cooking spray then olive oil in the dish. As an aside, I keep my olive oilin a squeeze bottle with some garlic cloves and bay leaves. I also sprinkled some oregano and garlic spices on the cheese. Feta is naturally salty, so I don’t recommend adding more salt. I put a block of feta cheese in the middle of the dish then filled in the dish with grape tomatoes. I covered with aluminum foil. Bake for 20 minutes.
  2. Next, I filled a large pot with water and a pinch of salt and brought to a boil to make the linguini according to the package’s instructions.
  3. Then, I took my frozen shrimp and put it in its own baking dish with some oil drizzle and put that into the oven as well. The shrimp are pre-cooked, just frozen so I chose this way to get them ready to eat. Take them out when the feta is done.
  4. After draining the linguini, set aside.
  5. When the baked feta is finished, take a large spoon or other utentsil to mash up the feta and blend in with the baked tomatoes to make a sauce. Pour into the bowl with the pasta and mix thoroughly, adding in the shrimp. (Obviously, you can use whatever meat or plant protein you’d like. Just happened to have frozen shrimp around.)
  6. Serve hot and enjoy. I thought this was fantastic and it got a huge thumbs up from my husband.
