APT8: Poppyseed Sour Cream Pound Cake with Lime Drizzle

When my spouse accidentally purchased 48 oz of sour cream at Costco, thinking it was cottage cheese, I needed to come up with ways to use up the bounty of dairy. (You may be wondering why we would want 48 oz of cottage cheese. We just do. Don’t judge us.)
I basically used this recipe from AllRecipes.com, with some modifications.
- Pre-heat oven to 350F.
- Cream together 1/2 cup of butter and 1 cup of sugar. If your butter isn’t already at room temperature, because really, whose is? Put it in the microwave on high for 15 seconds and only 15 seconds. If you have a super-powered microwave, put it in for less. You just want the butter soft, not melting. Use a mixer or your own elbow grease to cream these two together.
- Add in 1/2 cup of sour cream (I used a heaping cup because of my surplus), 3 eggs, and 1 teaspoon of pure vanilla extract. Mix together until blended.
- In a separate bowl, combine 1.5 cups of flour with 1 pinch of baking soda and 1/2 cup of dry poppyseeds.
- Combine wet and and dry ingredients together. Do not over mix. Make sure all the flour has been absorbed.
- In a well-greased loaf pan (cooking spray or shortening) pour in the batter. Bake approximately 40–50 minutes*, depends on the type of pan you use and your oven. It’s done when a toothpick comes out clean. Do not over bake. You want this to be soft and moist.
* While the loaf is baking, make the drizzle. Start with 3/4 cup of confectioners (10x) sugar. Two tablespoons of cold water and two tablespoons of lime juice. I used lime concentrate. If you have a fresh lime, feel free to grate some zest into it as well. Any citrus should work for this. - When the loaf comes out of the oven, quickly put it on a rack to cool with a cutting board or paper towels under the rack. You’ll see why in a second. While the loaf is still hot, Drizzle the lime sugar concoction over the loaf. You may need to repeat this a few times, as the drizzle will seep into the hot loaf. If you remembered to put something under the rack to catch all the excess drizzle, then your clean-up will be easier. Add as many passes of drizzle as you’d like.
- Let cool and cut into it when you want to eat it. Enjoy!
